Mealtime can be challenging with young children and in our house things become a lot more complicated when you layer in the various ingredients we have to eliminate from recipes because of life-threatening food allergies. Fortunately I have found a number of recipes to rely on over the past few years that help keep mealtime fresh and flavorful. Also, I have learned to find a balance between using fresh ingredients and other allergy-friendly food items to supplement a recipe, bagged lunch, or meal.
From the moment my oldest son was ready for solids I have made a concerted effort to be mindful of what my children eat, the quality of the ingredients, and to incorporate a variety of flavors. Most of the time I prefer to make food from scratch, but when the week becomes hectic or we need to grab something quick I have found the HappyFamily products meet the same criteria as when I make food in my own kitchen. A great example is how we use a packet of simple solids (pear or apple) and mix it with plain oatmeal. This helps us create a flavorful and nutritious breakfast without concern for hidden allergens that can be found in many breakfast products. When baking it is easy to make apple carrot spice muffins by using pouches of sweet potato, apples, carrot and cinnamon. Because of our dairy and egg restrictions we modify the original recipe to use egg replacer, rice milk, and maple syrup (to replace brown sugar)..
